Whole Wheat Fruit Shortcake

Here is the recipe for the shortcake I made on Sunday.


Ingredients:


1 cup All-purpose flour
3/4 cup whole wheat or tritical flour
1/4 cup sugar
1 T baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/8 tsp ginger
1/2 cup butter or margarine
1 beaten egg
2/3 cup milk
3/4 cup cooked wheat berries
About 3 cups fruit


Directions:

~In a mixing bowl stir together all-purpose flour, sugar, baking powder, salt, nutmeg, and ginger.

~Cut in butter or margarine til mixture resembles coarse crumbs.

~Combine beaten egg and milk.

~Add all at once to flour misture.

~Add wheat berries, stirring just till moistened.

~Spread dough in two greased 8X1 1/2 inch round baking pans

~Bake in a 450 degree oven for 10-12 minutes or till done.

~Cool shortcake in pans for 10 minutes.

~Remove from pans and cool on wire rack.




My notes: To make it more whole wheat, I made 1/2 the all purpose wheat into whole wheat. It was still a light cake and didn't make it too heavy. Instead of the nutmeg and ginger, I used an apple pie spice that we had in our spice cabinet. Also, I used all-purpose flour instead of the wheat berries.


To Assemble:

I used whipping cream to make, well, whipped cream. And we picked some wild boisen berries in our neighborhood. We spread half the whipped cream on the first layer with half the fruit. Then placed the second cake on top and used the rest of the whipped cream and fruit.

WIFD Tuesday

Tuesdays are my busy days. I babysit/homeschool in the mornings. Voice lesson in the afternoon. Then right from there to tutor two children for two hours. Then home, time for dinner, and then right out to gym. Crazy days. It makes me grateful for the less busy days of the week.


Today I wore my basic cream knit shirt with an ankle length Ralph Lauren skirt I got at a thrift store. It's easy to move around in and chase after littles (the youngest girl I babysit is 2 and can run:-).

Week In Feminine Dress-Sunday

The Sense and Sensibility Forum has started their WIFD.

The outfit I wore yesterday isn't a new one, but I hadn't gotten pictures of it yet. It is a skirt and princess shirt out of a sea grea linen-look-alike (it wrinkles just like linen:-P). The over shirt is sheer with sea green color flowers in it. I found it about a year ago at a JoAnn red-tag clearence.

I made it to wear to the SAICFF for their awards night, but ended up wearing a formal instead. I wore this to church the next day. It is more of a Spring outfit, so I put it away until Spring-like weather came along.

Then, this past Tuesday, I went to a Lost Arts group at our church and one of the young ladies there had her hand made jewelry with her and I found a pair of earrings that matched the outfit exactly! So I got them and decided to wear the outfit on Sunday.




We also had guests this Sunday over to have dinner and I made a whole wheat shortcake for dessert. Unfortunately I didn't get pictures until it was almost gone.



The Blackberries, we picked from wild patches in our neighborhood.

Tinned Food

I found this quote in a Hercule Poirot book I'm reading and thought it was delightfully expressive of what our family is trying to do with our eating.

To set the quote up, Hercule and some others have been trapped in a hotel high in the mountains without any hope of getting down for a few days.

"His wife, the cook, was more forthcoming. Fortunately, she explained to Poirot, there was a large reserve of tinned food--but she herself thought little of food in tins. It was wickedly expensive and what nourishemnt could there be in it? The good God had never intended people to live out of tins."

New Addition

This past week my room had a new addition. I had a very modern desk in my otherwise antique room. However my mom found a wonderful desk that matches my other furniture perfectly. So this last week it moved in.

The orginal key is lost, so for now I have to use a screwdriver to open it.


I had so much fun arranging my things in all the little cubbies!


There is so much to show, but I just chose a few close-ups for now.
